About the role

Hale Country Club & Spa is recruiting for a full-time Sous Chef to join our team. We are looking for talented individuals with a passion to create delicious food from freshly cooked ingredients, ready to deliver exceptional service and enhance the dining experience for our esteemed members and guests.

Responsibilities

  • Running shifts
  • Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organised for quality assurance
  • Works with head chef to maintain kitchen organisation, staff ability, and training opportunities
  • Leads kitchen team in head chef’s absence
  • To adhere to health & safety policies
  • Invention of new & innovative menu ideas
  • Ensuring the cleanliness standards are kept
  • Manage a clean and efficient kitchen department
  • Cost Management
  • Plan the day to day running of all sections of the kitchen effectively to meet the service standards
  • Ensure producing food on time, consistently and accurately
  • Manage rotas in accordance to business levels
  • Follow recipes and presentation specifications
  • Stock Rotation
  • Manage and maintain a clean, safe working environment.

Requirements

  • Previous experience in a busy kitchen environment in a similar role
  • Great attitude towards work & colleagues  
  • Desire to learn new skills & passion for food 
  • Ability to track expenses and manage a budget
  • Excellent use of various cooking methods, ingredients, equipment and processes.
  • Ability to multitask and work efficiently under pressure.
  • Knowledge of best cooking practices and understanding of trends and new styles.
  • Attention to detail and high standards of presentation, creative flair and imagination
  • Experience working in a diverse environment
  • Good communication and Team-working skills
